beans, spaghetti sauce, apple crisp

Something happens to me a lot: I have to make LOTS and LOTS of food from scratch.

It usually happens on the weekends, and then we eat the feast throughout the week.

Sometimes it happens during the week.

So, Monday night I put some beans to soak to make the best batch of beans you ever did taste.  The secret is in the water, believe it or not.  The next secret is slow-cooking them. Those are all the hints for now, though.

I continued to play “chef” and made my own apple crisp recipe.  I was trying it out to see if it would be worthy of Christmas morning breakfast.

Later, I made some fabulous spaghetti sauce using diced tomatoes with garlic and onion and one can of tomato sauce.  I will never buy sauce in a jar again.

Lastly, I made rolls.  Not just any kind of rolls, but real, baked-from-scratch-and-used-yeast rolls.  I’ve been eating them like they’re candy:

I wrote an article for these rolls complete with the recipe.  I figured out how to make these from scratch AND you don’t have to “knead” them.  They’re light and fluffy and…every time I think about them, I just want to lick my lips because the scent of baking bread and homebaked goodness is seriously overpowering.

As for the other stuff, I wonder if people are interested.  When I make the beans, sauce and apple crisp again, would you all like me to share them?

Really, I wanted to have fun with a little picture editing, but I’ll definitely share some of my secrets if people are interested.

  2. Oh no fair, because I ate leftover spaghetti and meatballs cold (once the kids were done) tonight, lol!! Your food looks amazing here and seriously thanks for sharing!!

    I love homemade rolls! I made some for Thanksgiving, and I’m pretty sure I’ll never buy store bought again. Your’s look delicious, can’t wait to try out this recipe!!

    Home made food is delish ESP when slow cooked:)

    Your pix say it all. I agree when beans are soaked overnight, they are easily cooked ESP with just a whistle :)

    Cyndi – I just made a bean dish this weekend, too! 4 cans of hot chili beans, 2 cans of red kidney beans, one bag frozen cut corn, one onion, two diced green peppers, one ham steak (diced by hand as the ham cubes in stores seem rubbery), and six cooked turkey sausage patties (crumbled). Started in crock pot at 10 a.m. and served at 7 p.m. Ham so tender it melted in your mouth. If I had it to do over, I’d probably leave out the turkey sausage. (It turned out dry for some reason) I did cheat with the canned beans as I’ve never had any luck with dry, and did use two packages of Jiffy corn muffin mix to make cornbread to pour the concoction over. Your rolls and apple crisp look fantastic! A old Italian trick my mother used in spaghetti sauce is to cut up a green pepper and add it with the onion and garlic. If you will also add one tiny can of tomato paste, it will help to thicken up the sauce somewhat, instead of being a little watery. God, I’m talking like I know how to cook! I retract all of the above and just say, “Great job!”

  6. Oooooh, yes, please please share the bean recipe! I know beans are healthy and all that, but they don’t exactly taste great on their own. Would love to learn how to jazz up their flavour a little bit. Those rolls look so yummy!

  8. I want it all! But since I just started a tiny kitchen fire toasting a Pop Tart, you’ll have to ship it prepared… :)
